Tropical Turkey Salad
Fresh lemon juice
Cooked turkey breast with skin
16 oz, diced (2 cups)
1 large, cored and sliced
1 large, peeled, pitted, and diced
1 medium, peeled, halved, seeded, and cut into chunks
Uncooked red onion(s)
½ cup(s), sliced, chopped
Pickled jalapeno peppers
½ oz, 1 pepper, seeded and minced
⅛ leaf/leaves, large, red leaves variety
- To make the dressing, whisk together the lemon juice, oil, salt, and black pepper in a serving bowl.
- Add the remaining ingredients to the dressing and toss to coat. Line 4 bowls with red leaf lettuce. Top evenly with the turkey salad. Yields 1 1/2 cups per serving.
