To boost the serving size, toss a 15 1⁄2-ounce can of red kidney beans or black beans, rinsed and drained into the salad.

Ingredients

Fresh lemon juice

3 Tbsp

Olive oil

2 tsp

Table salt

½ tsp

Black pepper

¼ tsp

Cooked turkey breast with skin

16 oz, diced (2 cups)

Apple

1 large, cored and sliced

Mango

1 large, peeled, pitted, and diced

Papaya

1 medium, peeled, halved, seeded, and cut into chunks

Red onion

½ cup(s), sliced, chopped

Pickled jalapeno peppers

½ oz, 1 pepper, seeded and minced

Lettuce

leaf/leaves, large, red leaves variety

Instructions

  1. To make the dressing, whisk together the lemon juice, oil, salt, and black pepper in a serving bowl.
  2. Add the remaining ingredients to the dressing and toss to coat. Line 4 bowls with red leaf lettuce. Top evenly with the turkey salad. Yields 1 1/2 cups per serving.
