In this tropics-inspired dish, coconut water infuses subtle flavor into the oatmeal. Each serving is topped with juicy fresh pineapple pieces and crisp coconut chips. Chia seeds, on trend as well as good for you, make an appearance here as well.

uncooked quick oats

dried chia seeds

Instructions

  1. Bring coconut water to boil in medium saucepan; add oats and chia seeds. Reduce heat and simmer, stirring occasionally, until oats are cooked and mixture has thickened, about 5 minutes.
  2. Spoon oat mixture evenly into 4 bowls. Top evenly with fruit and coconut chips.
  3. Per serving: 1/2 cup oat mixture, 1/2 cup fruit, and 1 tablespoon coconut
