- Coat a large saucepan with cooking spray and set over medium-high heat; add garlic and cook, stirring frequently, until browned, about 30 seconds.
- Add broth and tortellini; cover and bring to a boil. Reduce heat and simmer uncovered, about 5 minutes.
- Add spinach and tomatoes; simmer, uncovered, 5 minutes. Yields about 1 cup per serving.
