Swap in you favorite flavor jam for the strawberry, if desired.

Ingredients

Egg whites

4 large

Cream of tartar

¼ tsp

Sugar

¾ cup(s)

Vanilla extract

½ tsp

Mini semisweet chocolate chips

¾ cup(s)

Sugar free jam

¼ cup(s), strawberry-variety

Instructions

  1. Preheat oven to 300℉. Line 2 baking sheets with parchment paper.
  2. Combine the egg whites and cream of tartar in a mixing bowl. Beat with an electric mixer until soft peaks form. Add sugar to the bowl, 1/4 cup at a time, and beat until it is incorporated into the mixture. Add the vanilla and beat until hard peaks form. Do not overbeat. Very gently fold in the chocolate chips.
  3. Drop batter by the tablespoonful onto the prepared baking sheets to make 40 meringues. Bake for 40 minutes. Turn off the oven and leave the meringues in the oven with the door closed until the meringues are completely cooled (1 to 2 hours).
  4. Remove the meringues from the baking sheets. Spread a meringue with a very thin layer of strawberry jam and sandwich together with another meringue. Repeat with the remaining ingredients to make 20 meringue sandwiches. Transfer the meringue sandwiches to a serving dish or airtight container until serving.
