Ingredients

Fat free cottage cheese

½ cup(s)

Ranch seasoning

1 packet(s)

Plain fat free Greek yogurt

1 cup(s)

Canned artichoke hearts, drained

1 cup(s), quartered

Chopped frozen spinach

1½ cup(s), thawed

Fresh lemon juice

1 Tbsp

Kosher salt

¼ tsp

Black pepper

¼ tsp

Fresh vegetable sticks

Instructions

  1. In a food processor, puree the cottage cheese and ranch seasoning until mostly smooth. Add the yogurt, artichokes, spinach, lemon juice, salt, and pepper. Pulse until very finely chopped, stopping and scraping side of bowl occasionally.
  2. Serve immediately with vegetable sticks or cover and refrigerate for up to 4 days.
  3. Serving size: about 1/3 cup dip and 1 cup vegetables
