This six-ingredient, Greek-inspired recipe makes a fantastic side dish for any menu. The bright green spinach and the briny cheese pair well chicken, fish, pork and beef, and add a beautiful pop of color to the table. Ready in less than 25 minutes, this recipe is easy to prepare and ideal for spring holiday meals such as Easter and Mother's Day. Instructions

  1. In a large skillet, heat oil over medium heat. Add onion and cook, stirring frequently, until just golden, about 3 minutes.
  2. Add spinach, salt and pepper, stirring to combine. Cook until heated through, about 3 minutes; stir in feta. Yields about 1/2 cup per serving.
