Spicy sriracha-sesame carrot dip

This silky dip has a delicious Asian sweet-spicy flavor that pairs well with all fresh celery, radishes and broccoli florets as well as toasted pita. Great for a dinner party hors d'oeuvres or game day crudite platter, this unique dip will surely garner raves from any guests. Try as a sandwich or pita spread as well with fresh spinach, cucumbers and tomato slices for a veggie-filled lunch. Cook the carrots a day before your party and allow them to cool overnight to make the final steps effortless. Love the flavor profile? Try this dip with peeled sweet potatoes for simple twist. Turn the spicy heat up or down with the amount of sriracha used.


Ingredients
Baby carrots
1 pound(s), chopped
Reduced calorie mayonnaise
¼ cup(s)
Sriracha hot sauce
1 Tbsp, or less to taste
Toasted sesame oil
1 Tbsp
Jarred minced garlic
2 tsp
Minced ginger
2 tsp
Rice wine vinegar
1 tsp
Table salt
½ tsp
Scallions
2 Tbsp, chopped (for garnish)
Instructions

Place carrots in a microwave safe dish, cover with water and cook on High power until extremely soft, 15 minutes; drain well and chill.

Combine cooked carrots with remaining ingredients, except scallions, in a blender or food processor; process until smooth and completely blended. Serve garnished with scallions.
