Steel-cut oats have a nutty, firm texture. They take a long time to prepare so they’re perfect for use in a slow cooker.

Ingredients

Water

6 cup(s)

Uncooked pumpkin

3 cup(s), cubed (preferably from pie or sugar pumpkins)

Uncooked steel cut oats

1½ cup(s)

Honey

½ cup(s)

Ground cinnamon

1 tsp

Table salt

½ tsp

Ground nutmeg

¼ tsp, or grated nutmeg

Instructions

  1. Put everything in a 3- to 6-quart slow cooker; stir well.
  2. Cover and cook on low for 8 hours; stir well before serving.
  3. Serving size: 1 c

Notes

Swap sweet potato for the pumpkin, if desired.
