Think of this as your go-to side salad, one to round out weeknight meals or have in your back pocket for casual get-togethers. You can vary the flavor of the dressing by swapping out the lemon juice in favor of an equal amount of red wine vinegar, apple cider vinegar, or balsamic vinegar.
Ingredients
Extra virgin olive oil

Fresh lemon juice

Dijon mustard

Kosher salt

Black pepper

Mixed greens

Grape tomatoes
1 cup(s), halved
Shredded carrots

Persian (mini) cucumber

Instructions

In a small jar, combine the oil, lemon juice, mustard, salt, and black pepper; screw on the lid and shake the jar well to combine.

In a large bowl, combine the greens, tomatoes, carrots, and cucumber. Drizzle the dressing over the salad and toss gently to combine.
