Believe it or not, this flavorful, delicious salad can be ready to go in just seven minutes. The dressing comes together quickly, as all you have to do is whisk the mayonnaise, Greek yogurt, store-bought horseradish, salt, and pepper in the bowl you'll serve the salad in. If you happen to have fresh horseradish root on hand, feel free to use that instead. Simply toss in the roast beef, romaine lettuce, and fresh cherry tomatoes, and your salad is ready to go. You can add more substance, bulk, and nutrients by stirring in 1 thinly sliced red bell pepper or using a 5-oz. bag of watercress.

Fat free mayonnaise

3 Tbsp

Plain fat free Greek yogurt

3 Tbsp

Store-bought horseradish

2 tsp

Table salt

¼ tsp

Black pepper

¼ tsp

Deli style roast beef slice(s)

½ pound(s), trimmed and cut into strips

Romaine lettuce

1 head(s), thinly sliced (about 6 cups)

Fresh cherry tomato(es)

1 cup(s), halved

  1. To make the dressing, whisk together the mayonnaise, yogurt, horseradish, salt, and pepper in a serving bowl.
  2. Add the roast beef, lettuce, and tomatoes to the dressing; toss to coat. Yields about 2 cups per serving.
