Believe it or not, this recipe was actually featured on the cover of the very first issue of WW magazine, in February 1968. And you can probably see why, as it's simple, fun, and colorful, as well as full of flavor, but not the calories, thanks to the utilization of powdered milk, diet grapefruit soda, orange extract, and lots of fresh strawberries and blueberries. For easy handling, you can store the topping in the freezer while you're preparing the parfait. If time permits, place the parfait in the freezer for about 20 minutes after each layer is added for a prettier presentation, as they'll hold together better.

Ingredients

Dry nonfat milk powder

Diet grapefruit soda

cup(s)

Orange extract

¼ tsp

Strawberries

¼ cup(s), sliced

Blueberries

¼ cup(s)

Instructions

  1. Place dry milk in mixing bowl.
  2. Stir in soda and orange extract. Beat at high speed with electric mixer, or by hand, until topping stands in peaks.
  3. In parfait glass, spoon the strawberries, topping, and blueberries in alternate layers.
