These thin, crispy waffles have a wonderful pumpkin-spice essence. They can be made in just half an hour and feature ground cinnamon, ground nutmeg, dark brown sugar, canned pumpkin, and buttermilk for lots of spice and depth of flavor. All you have to do is mix the dry ingredients and wet ingredients together, no electric mixer needed, then simply spoon the batter onto a hot waffle iron. They'll only take about 5 minutes to cook. You'll find yourself making these all fall as the leaves change color, so if you don't happen to have a waffle iron, now is the perfect time to invest in one.

Instructions

Lightly spoon the flour into a dry measuring cup; level with a knife. In a large bowl, combine the flour, baking powder, and the next four ingredients, and stir well with a whisk.

In another bowl, combine the egg, brown sugar, oil, pumpkin, and buttermilk in a bowl, and whisk until blended. Add the pumpkin mixture to the flour mixture and stir until well combined.

Coat a waffle iron with cooking spray and preheat it. Spoon about 1⁄4 cup of batter per waffle onto the hot waffle iron, spreading the batter to the edges. Cook until the steaming stops, 5 to 7 minutes. Repeat with the remaining batter.
