This easy quick bread is a breeze to make: Simply whisk together the ingredients, pour into the pan, and bake—no need to pull out an electric mixer. It’s flavored with pumpkin pie spice for warmth, sweetened with just the right amount of brown sugar so that it’s not too sweet, and dotted with chocolate chips throughout. But the real star is the pumpkin (we use an entire can), whose flavor shines through. For easy cleanup and easy release from the pan, be sure to line it with parchment paper.

Whole wheat pastry flour

Instructions

  1. Preheat the oven to 350°F. Line a 9 x 5–inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt. In another medium bowl, whisk together the sugar, oil, vanilla, eggs, and pumpkin. Add the sugar mixture to the flour mixture; stir until well combined. Pour the batter into the prepared pan. Bake at 350°F until a wooden pick inserted in the center comes out clean, 50 to 55 minutes.
  3. Using the parchment paper, lift the bread out of the pan; cool on a wire rack. Slice into 8 even pieces, then slice each piece in half. Serve warm or at room temperature.
  4. Serving size: 1 slice
