Happy hour is here to stay with our slimmed down Piña Colada. We used light coconut milk instead of regular, and added fat-free yogurt for creaminess.

Ingredients

pineapple

2 cup(s), cubed

pineapple juice

1½ cup(s)

light unsweetened coconut milk

fat-free vanilla yogurt

ice cube(s)

1 cup(s)

Instructions

  1. Combine all ingredients in a blender and process until smooth. Yields about 1 1/4 cups per serving.

Notes

You can use canned pineapple chunks packed in their own juice instead of fresh pineapple (could affect SmartPoints values). Add a shot of rum for an alcoholic version (could affect SmartPoints values).
