Peanut Butter & Greek Yogurt Parfait
Our protein-packed parfait is rich and nutty, with crunchy bits within and on top. For a layered look that gives you different tastes in each bite, we set aside some vanilla-flavored yogurt for a topping and stir powdered peanut butter and chopped peanuts into the rest. If you prefer, you can mix everything together and skip the layering.
Plain fat free Greek yogurt
Monk fruit sweetener with erythritol
Powdered peanut butter
Unsalted dry roasted peanuts
1½ tsp, finely chopped
Unsweetened coconut flakes
1 Tbsp, large variety, toasted
- In a small bowl, stir together the yogurt, monk fruit sweetener, and vanilla. Set aside 2 tbsp of the vanilla yogurt mixture. Stir the powdered peanut butter and chopped peanuts into the remaining yogurt mixture. Spoon the peanut butter yogurt mixture into a small glass; top with the vanilla yogurt mixture and coconut.
