This colorful salad is exceptionally versatile: Serve it as a side dish, a snackm or even for breakfast (make it the night before). It's loaded with vitamin C thanks to the oranges, strawberries, and kiwi. All you have to do is toss all of the ingredients together in one bowl, and you can make it ahead since it's best served cold. Let it hang out in the fridge for an hour or two while you get the rest of your dinner together.

unsweetened orange juice

honey

2 medium, peeled and sliced

strawberries

2 cup(s), hulled and sliced

grapes

2 medium, peeled and sliced

mint leaves

2 Tbsp, chopped

Instructions

  1. In a large nonreactive bowl, combine the orange juice and honey. Add the fruits; toss to coat. Refrigerate, covered, until chilled, at least 1 hour. Serve, sprinkled with mint.
