This colorful salad is exceptionally versatile: Serve it as a side dish, a snack or even for breakfast (make it the night before). It's loaded with vitamin C.

Ingredients

unsweetened orange juice

1 Tbsp

honey

2 tsp

orange(s)

2 medium, peeled and sliced

strawberries

2 cup(s), hulled and sliced

grapes

1 cup(s), halved

kiwifruit(s)

2 medium, peeled and sliced

mint leaves

2 Tbsp, chopped

Instructions

  1. In a large nonreactive bowl, combine the orange juice and honey. Add the fruits; toss to coat. Refrigerate, covered, until chilled, at least 1 hour. Serve, sprinkled with mint.
