Chia seeds are a good source of protein and fiber, and are great in no-cook puddings like this one, or try them sprinkled over yogurt or cereal.

Ingredients

Dried chia seeds

½ cup(s)

Unsweetened vanilla almond milk

2 cup(s)

Agave nectar

3 Tbsp

Strawberries

2 cup(s), roughly chopped

Unsweetened coconut flakes

2 Tbsp, toasted if desired

Instructions

  1. Mix chia seeds, almond milk, and agave in a medium bowl and stir until combined. Cover and refrigerate until thick, about 8 hours or overnight.
  2. Stir pudding and divide between 4 bowls. Top each evenly with strawberries and coconut flakes.
  3. Serving size: a generous ½ cup pudding, ½ cup strawberries, and ½ tbsp coconut

Notes

Be aware that chia seeds develop a thick, viscous quality when soaked, somewhat like the texture of cooked tapioca.
