The only thing brighter than the flavors in these juicy, veggie-topped turkey burgers is that they smartly come together on the grill in 10 minutes.

Ingredients

Cooking spray

4 spray(s)

Uncooked 99% lean ground turkey

1 pound(s)

Fresh parsley

cup(s), and mint (a mix of both), chopped

Uncooked red onion(s)

2 Tbsp, chopped

Ground coriander

1 tsp

Ground cumin

1 tsp

Table salt

1 tsp

Cucumber(s)

1 cup(s), chopped

Fresh tomato(es)

1 cup(s), chopped

Uncooked red onion(s)

¼ cup(s), chopped, sliced

Fresh lemon juice

1 Tbsp

Olive oil

1 Tbsp

Table salt

½ tsp

Black pepper

1 pinch(es)

Plain hamburger bun

4 bun(s), feta, lettuce, and sliced tomatoes (optional), for serving

Instructions

  1. Off heat, coat a grill rack or grill pan with cooking spray and heat over medium-high.
  2. In a large bowl, gently combine the turkey, herbs, chopped onion, coriander, and cumin. Form the meat into 4 patties and season with 1 tsp salt. Grill the patties until an instant-read thermometer inserted into the centers reads 165°F, 4 to 5 minutes per side.
  3. In a medium bowl, combine the cucumber, tomato, sliced onion, lemon juice, oil, remaining ½ tsp salt, and black pepper.
  4. Top the patties with the salad before serving. Or if desired, build burgers with the buns, patties, salad, feta, lettuce, and tomatoes. (This will affect your PersonalPoints value.)
  5. Per serving: 1 patty and ½ cup salad
