This mock fried rice gets a protein boost from ground lupin beans. It makes a super vegetarian main meal or a side dish to your protein of choice. If you don't have the veggies the recipe calls for, toss in any vegetables you've got on hand.

Ingredients

Carrington Farms Plain ground lupin bean, dry

½ cup(s)

Coconut oil

2 tsp

Shredded red cabbage

¼ cup(s)

Mushrooms

¼ cup(s), sliced, chopped

Broccoli

¼ cup(s), chopped, florets

Sugar snap peas

¼ cup(s), whole, chopped

Carrots

¼ cup(s), chopped

Egg

2 large egg(s)

Table salt

1 pinch(es), or to taste

Black pepper

1 pinch(es), or to taste

Less sodium soy sauce

1 tsp, or coconut aminos (or to taste; optional)

Sesame seeds

2 tsp

Instructions

  1. In a medium saucepan, bring 1 ½ quarts of water to a boil. Stir in ground lupin and an optional pinch of salt; boil 3 minutes. Strain; set aside.
  2. Set a large skillet over medium heat. When hot, add oil and vegetables. Cook, stirring frequently, until vegetables are tender and lightly browned, 3 to 5 minutes.
  3. Create two large spaces in vegetables in skillet; crack an egg into each opening. Scramble eggs, mixing them into the vegetables, until cooked through, 1 to 2 minutes. Season to taste with salt, pepper, and optional coconut aminos or soy sauce. Garnish with sesame seeds.
  4. Serving size: 1 heaping cup
