Feel free to swap in—or add—other veggies you have on hand such as roasted zucchini and eggplant, water-packed jarred peppers (patted dry), or shredded carrots and cabbage.

Ingredients

Garlic and herb reduced fat cheese spread

2 Tbsp

Light multigrain bread

2 slice(s)

Lettuce

2 leaf/leaves, large, red or green leaf

Red onion

¼ cup(s), sliced

Kosher dill pickle sandwich slices

Tomato

3 slice(s)

Table salt

Black pepper

Avocado

¼ item(s), medium, thinly sliced

Canned artichoke hearts, drained

Instructions

  1. Spread the garlic and herb cheese onto 1 side of each slice of bread. Top one slice with the lettuce, red onion, pickles, and tomato. Season the tomato with the salt and pepper.
  2. Layer the avocado and artichoke quarters on top. Place the other slice of bread on top, cheese spread side down.
  3. Serving size: 1 sandwich
