Lightened-up chicken Parmesan by Katie Lee Biegel
98% fat-free uncooked ground chicken breast
¼ tsp, freshly ground
Store-bought marinara sauce
Shredded part-skim mozzarella cheese
Grated Parmesan cheese
4 leaf/leaves, torn
- Preheat oven to 400°F. Coat an ovenproof 9- or 10-inch skillet with cooking spray.
- In a medium bowl, combine chicken with garlic powder, oregano, salt, and pepper. Transfer to prepared skillet and using your fingers, spread into a thin layer that covers bottom of skillet. Bake 8 to 10 minutes.
- Remove from oven, spoon marinara over top, and sprinkle with both types of cheese. Return to oven and bake until cheese is golden brown and bubbly, about 15 to 20 minutes. Remove from oven and garnish with basil.
