Sandwiches star at breakfast with this tasty, Italian-inspired egg sandwich. Eggs are loved by chefs for absorbing the flavors of whatever they're cooked with, so this panini comes off the press delightfully basil-scented and cheesy. Flatbread is great for paninis, because it grills up crisply and also super quickly. If you don't have a panini press, prepare the sandwich as directed and cook it in a cast iron grill pan or skillet, pressing a lid or sauce pot as a weight on top of the sandwich in order to form grill marks and benefit from a thin, crusty sandwich. Be sure to cook the eggs only until just set, as they'll cook more inside the sandwich.

Part skim mozzarella cheese

Plum tomato
1 medium, sliced
Fresh basil
3 leaf/leaves, torn
Instructions

Preheat Panini sandwich press.

In a small non-stick pan coated with cooking spray, scramble eggs until just set and fluffy. Set aside.

Fold flatbread, and place on sandwich press. Fill with eggs, mozzarella, tomato slices, and basil.

Grill sandwich on Panini press until cheese is melted and sandwich is hot. Cut in half, and serve immediately.
