Ice cream sodas are a classic summer treat, and with our slight modifications, you can enjoy this sweet, childhood favorite without the traditionally sky-high calorie count. Soda is usually a key component, but we opted for fizzy seltzer mixed with vanilla extract to get the bubbles and sweetness without all the sugar. Vanilla ice cream is standard, and we haven’t skipped that here. These are easy to make and are ready to go in less than 10 minutes. Serve these sodas with straws as a fun, nostalgic finish to a summer gathering or just make them for your family for an out-of-the-ordinary weeknight treat.
