Roasting transforms fresh pears into buttery-soft and tender bites in just 15 minutes. When filled with wonderfully rich, silky mascarpone cheese, these pears become an unbeatable dessert that’s easy to make even on a weeknight. This is an excellent recipe to double (or triple) when pears are in season. Just use a large baking sheet if your pears won't all fit on a small one. Choose Anjou or Bosc pears for this recipe, or whenever you’re cooking or baking pears. They hold their shape and maintain their texture without breaking down, unlike the Comice pears which fall apart when cooked.

Bartlett pear

2 medium, or Bosc or Anjou, halved and cored

Orange juice

1 Tbsp

Honey

3 tsp, divided

Fresh thyme

½ tsp, leaves

Mascarpone

2 Tbsp

Instructions

Preheat oven to 400°F. Line small baking sheet with foil; spray foil with nonstick spray.

On foil, place pear halves, cut side up; if necessary, cut a sliver off bottom of pear halves so they sit level. In cup, stir together orange juice, 2 tsp honey, and thyme. Over pears, brush orange-honey mixture, letting excess pool in cavities. Roast pears until heated through and very tender when pierced with paring knife, about 15 minutes. On baking sheet, let pears cool 5 minutes; this will allow some juice in cavities to be absorbed.

On each of 2 plates, arrange 2 pear halves, cavity side up. Into each pear cavity, spoon 1⁄2 tbsp mascarpone. Drizzle tops evenly with remaining 1 tsp honey.
