Chives

2 tsp, chopped, or other fresh herbs like parsley

Unsweetened applesauce

¼ cup(s), divided

Plain fat free Greek yogurt

6 Tbsp, divided

In a medium bowl, whisk the eggs, cottage cheese, salt, and pepper until well combined.

Rinse the matzo sheets under cold water for 20 seconds. Shake off excess water and break into small pieces into the bowl with the egg mixture. Stir to combine and let stand 5 minutes.

Coat a large nonstick skillet with olive oil spray. Add the onion and cook on medium-high, until onions are golden, about 3 minutes, stirring often.

To onion, add the matzo and egg mixture. Cook 2 minutes, or until eggs are set to desired doneness, stirring often.

To serve, garnish with the chive or other herbs. Serve with dollops of the applesauce and Greek yogurt.
