Before placing the chops on the grill, trim any fat closely to prevent any flare-ups. Because veal is such a lean trim of meat, it cannot tolerate overcooking. Combine first six ingredients in a heavy-duty zip-top plastic bag; seal. Marinate in refrigerator 4 hours, turning bag occasionally.

Remove chops from bag; discard marinade.

Place chops on grill rack coated with cooking spray; cover and grill 6 minutes on each side or until desired degree of doneness. Yield: 4 servings (serving size: 1 veal chop).
