Elevate your weeknight dinner with this quick grilled dish that's prepared from a make-ahead, six-ingredient marinade. Before placing the chops on the grill, trim any fat closely to prevent any flare-ups. To avoid overcooking the veal, be sure to preheat the grill to form a crispy crust on the outside before the center of the meat overcooks. Because veal is such a lean trim of meat, it cannot tolerate overcooking. For an easy side dish, toss your favorite vegetables with a little olive oil, place in a grill basket or on a metal skewer, and grill with the chops.

Uncooked veal chop

24 oz, (4 bone-in chops)

Balsamic vinegar

Olive oil

¼ cup(s)

Fresh sage

2 Tbsp, chopped

White wine vinegar

Garlic

3 clove(s), minced

Cooking spray

Instructions

  1. Combine first six ingredients in a heavy-duty zip-top plastic bag; seal. Marinate in refrigerator 4 hours, turning bag occasionally.
  2. Prepare grill.
  3. Remove chops from bag; discard marinade.
  4. Place chops on grill rack coated with cooking spray; cover and grill 6 minutes on each side or until desired degree of doneness. Yield: 4 servings (serving size: 1 veal chop).
