Grilled Manchego and Serrano Ham Sandwiches

Enjoy the sandwiches with a bowl of minestrone soup.
½ tsp, smoked
Whole wheat sandwich thin(s)
2 oz, thinly sliced
Shredded manchego cheese
Olive oil cooking spray
- Stir together mayonnaise and paprika in small bowl. Spread 1 tablespoon mayonnaise mixture on bottom of each sandwich thin. Layer each sandwich evenly with ham and manchego. Cover with tops of sandwich thins.
- Heat large nonstick skillet or griddle over medium heat. Lightly spray both sides of sandwiches with olive-oil nonstick spray. Place sandwiches in skillet and cook, turning once, until bread is toasted and cheese is melted, about 5 minutes.
- Cut each sandwich in half and serve at once.
