Grilled Manchego and Serrano Ham Sandwiches

Ingredients

Light mayonnaise

Paprika

½ tsp, smoked

Whole wheat sandwich thin(s)

Serrano ham

2 oz, thinly sliced

Shredded manchego cheese

Instructions

  1. Stir together mayonnaise and paprika in small bowl. Spread 1 tablespoon mayonnaise mixture on bottom of each sandwich thin. Layer each sandwich evenly with ham and manchego. Cover with tops of sandwich thins.
  2. Heat large nonstick skillet or griddle over medium heat. Lightly spray both sides of sandwiches with olive-oil nonstick spray. Place sandwiches in skillet and cook, turning once, until bread is toasted and cheese is melted, about 5 minutes.
  3. Cut each sandwich in half and serve at once.
  4. Per serving (1 sandwich)
