Grilled Chicken & Veggie Kebabs
Recipes don’t get any easier than this! Serve with a simple salad and some corn on the cob. Other great veggie options for the skewers include frozen pearl onions or fresh red onion chunks, and zucchini wedges. Even blanched whole Brussels sprouts would be great.
Uncooked boneless skinless chicken breast(s)
1 pound(s), cut into 1-inch pieces
Fresh cherry tomato(es)
Dried seasoning mix
4 tsp, of your favorite variety
- Off heat, coat an outdoor grill rack with cooking spray. Prepare the grill to medium-high heat.
- Divide the chicken and vegetables among 8 short skewers, coat with cooking spray, and sprinkle with the seasoning. Grill until the chicken is cooked through, 3 to 5 minutes per side.
- Serving size: 2 kebabs
