Green Pea Dip

Ingredients
Uncooked green peas
10 oz, fresh or frozen
Olive oil
1 Tbsp
Fresh lime juice
1 Tbsp
Ground cumin
¾ tsp
Table salt
½ tsp
Plum tomato
1 medium, seeds removed, diced
Red onion
2 Tbsp, minced, finely chopped
Cilantro
3 Tbsp, chopped
Hot pepper sauce
¼ tsp, or to taste

Bring small saucepan half filled with water to boil. Add peas; adjust heat and simmer until peas are very tender, 4–5 minutes. Drain and cool under cold running water. Drain again.

Put peas, oil, lime juice, cumin, and salt in food processor and puree. Scrape into bowl and stir in tomato, onion, cilantro, and pepper sauce. Cover and refrigerate at least 15 minutes or up to 1 day for flavors to blend.
