Greek shrimp with orzo

We renovated this classic Greek dish so it has full-strength flavor with just a touch of fat. It's hearty and satisfying; a year-round winner. Orzo is a rice-shaped pasta that you can serve similar to rice. It is cooked like traditional pasta and can be served either hot or cold. We used regular orzo in this recipe, but it also comes in colors. This shrimp dish makes an excellent one-dish meal. You can also serve it with a salad. Save any leftovers for lunch the next day.


Ingredients
Uncooked orzo
12 oz
Olive oil
2 tsp
Onion
0.5 cup(s), chopped
Green bell pepper
1 medium
Garlic
2 clove(s)
Canned diced tomatoes
28 oz
Dried oregano
1 tsp
Uncooked shrimp
1 pound(s)
Fresh basil
0.25 cup(s)
Crumbled feta cheese

Cook orzo in salted water according to package directions without added fat; drain and set aside.

Meanwhile, heat oil in a large saucepan over medium heat. Add onion, pepper and garlic; cook until soft, stirring occasionally, about 3 minutes. Add tomatoes and oregano; bring to a simmer. Add shrimp; cook until shrimp are bright pink and cooked through, about 5 minutes.

Spoon cooked orzo into shrimp mixture; stir to combine. Remove from heat and stir in basil. Spoon about 1 1/4 cups of orzo-shrimp mixture into a bowl and top with 1 teaspoon of feta.
