Ice cream sandwiches are a well-loved classic treat, and this recipe lets you make your own in a matter of minutes. Low-fat coffee frozen yogurt gives this childhood favorite a grown-up taste. This frozen treat can be made gluten-free by substituting the wafers for a gluten-free variety, and if you're making these for the whole family, you might want to swap out the coffee frozen yogurt for a vanilla or other variety, too. Wrapping each mud pie in plastic wraps helps the filling to freeze in the shape of the cookie, so wrap them tightly for best results.

Ingredients

Chocolate wafer

20 item(s), or vanilla wafers

Coffee-flavored lowfat frozen yogurt

1¼ cup(s), softened

Fat-free fudge topping

Instructions

  1. Spread 2 tablespoons of frozen yogurt on top of each of 10 wafers.
  2. Drizzle 1 teaspoon of fudge topping over each yogurt-covered wafer. Cover with remaining wafers and gently press together to make sandwiches. Wrap each mud pie in plastic wrap and freeze for 1 hour. Yields 1 per serving.
