Whip this up for your next picnic or backyard cookout. The robust flavors of basil, Parmesan, and garlic are guaranteed to satisfy. Although the arugula does wilt a bit, the salad is still delicious the next day, so it’s a good make-ahead option.

Ingredients

Uncooked penne pasta

8 oz, or cavatappi

Grape tomatoes

1½ cup(s), halved

Kosher salt

¾ tsp

Black pepper

½ tsp

Reduced-fat pesto sauce

¼ cup(s)

Baby arugula

4 cup(s)

Parmesan cheese

2 oz, shaved or thickly grated

Instructions

  1. Cook the pasta according to the package directions. Drain and rinse under cold water.
  2. Meanwhile, in a large bowl, toss together the tomatoes, salt, and pepper; let stand while the pasta cooks. When the pasta is done and the tomatoes have released some juice, stir in the pesto until well combined. Stir in the pasta and arugula until well combined. Top with the cheese.
  3. Serving size: about 1 cup
