With refreshingly little time and effort, you can enjoy this hearty, satisfying Tex-Mex style breakfast bowl. It makes just one serving, but you can easily scale everything up to serve more people.

Ingredients

Cooking spray

2 spray(s)

Egg

2 large egg(s), lightly beaten

Table salt

2 pinch(es), divided

Black pepper

2 pinch(es), divided

Canned black beans

½ cup(s), drained and warmed

Reduced sodium taco seasoning

tsp

Cherry tomatoes

¼ cup(s), quartered

Avocado

¼ item(s), sliced

Instructions

  1. Coat a small nonstick skillet with cooking spray and heat over medium-low. Add the eggs and sprinkle with a pinch each of salt and black pepper. Cook, stirring frequently, until scrambled, about 2 minutes. Arrange the eggs in a shallow bowl. Arrange the beans in the bowl and sprinkle with the taco seasoning. Arrange the tomatoes and avocado in the bowl; sprinkle the avocado with the remaining pinch each of salt and black pepper.
