Unlike a pan pizza, which has a thick crust at the bottom, this casserole involves layering pizza dough twice with marinara, veggies, and pepperoni for more flavor distribution throughout. Make sure to dry out the frozen pepper mix as described in step 1 so the casserole doesn’t get soggy.

8 oz, thin pizza crust dough (or similar product)

Marinara sauce

Instructions

  1. Preheat the oven to 375°F. Coat an 11 x 7-inch baking dish with cooking spray. Arrange the frozen pepper mix on a double layer of paper towels on a microwave-safe plate. Microwave on High for 2 minutes.
  2. Unroll the pizza dough; cut the dough in half crosswise. Arrange one piece of dough in the prepared baking dish, stretching slightly to fit. Spread ⅓ cup marinara over the dough; top with half of the pepper mix and half of the pepperoni slices. Top with the other piece of dough. Spread ⅓ cup marinara over the dough; top with half of the pepper mix. Sprinkle the cheese evenly over the top; arrange the remaining pepperoni slices on top. Bake until the dough is cooked through and the cheese melts and starts to brown, 25 to 30 minutes. Cut the casserole into 4 equal pieces.
