We like the look of red quinoa in this salad, but you can also substitute white quinoa. Look for frozen precooked red or white quinoa in the freezer section of your supermarket.

Instructions

Spray medium skillet with cooking spray and set over medium heat. Sprinkle chicken with salt and cook, turning occasionally, until cooked through, about 8 minutes.

Meanwhile, combine dressing and curry powder in a large bowl. Add kale, quinoa, apple, onion, and chicken; toss to coat.
