Brown Basmati rice takes about 20 minutes longer to cook, but its enticing nutty flavor, extra fiber, and appealing texture make it worth the extra time.

Ingredients

Uncooked long grain brown rice

1 cup(s), basmati variety

Uncooked lean and trimmed beef strip sirloin

1¼ pound(s), cut into 1-inch chunks

Red onion

1 medium, quartered and separated into slices

Uncooked yellow summer squash

1 medium, quartered and separated into slices

Uncooked scallop summer squash

2 cup(s), sliced, 4 babypatty variety

Canola oil

2 tsp

Curry powder

2½ tsp

Table salt

¾ tsp

Cilantro

¼ cup(s), fresh, chopped

Instructions

  1. Prepare the rice according to the package directions, omitting the salt if desired.
  2. Spray the broiler rack with nonstick spray and preheat the broiler.
  3. Toss together all the remaining ingredients except the cilantro in a large bowl.
  4. Thread the beef, onion, and squash alternately on 8 (12-inch) metal skewers. Place the skewers on the prepared broiler rack and broil 5 inches from the heat, turning occasionally, until an instant-read thermometer inserted into a chunk of beef registers 145°F for medium-rare, about 10 minutes. Serve with the rice and sprinkle with the cilantro. Yields 2 skewers and 3⁄4 cup rice per serving.
