Cumin-lime pinto bean dip

This creamy dip comes together quickly in the food processor, so it’s perfect when you need a homemade appetizer fast. It’s loaded with fresh flavor from the lime and cilantro, and it’s terrific for scooping with chips or fresh veggies.

Ingredients

Canned pinto beans

15½ oz, 1 can, rinsed and drained

Light sour cream

2 Tbsp

Water

2 Tbsp

Lime zest

1 tsp, grated

Fresh lime juice

4 tsp

Olive oil

2 tsp

Garlic

1 clove(s), chopped

Ground cumin

¾ tsp

Table salt

¼ tsp, or to taste

Cilantro

1 Tbsp, chopped

Instructions

1 Combine all ingredients except cilantro in food processor and puree. (Add another tablespoon or 2 of water if dip seems too thick.) Season to taste with additional salt, if desired.

2 Transfer dip to serving bowl and sprinkle with cilantro.
