Cumin-lime pinto bean dip
Canned pinto beans
15½ oz, 1 can, rinsed and drained
Light sour cream
1 tsp, grated
Fresh lime juice
1 medium clove(s), chopped
¼ tsp, or to taste
1 Tbsp, chopped
- 1 Combine all ingredients except cilantro in food processor and puree. (Add another tablespoon or 2 of water if dip seems too thick.) Season to taste with additional salt, if desired.
- 2 Transfer dip to serving bowl and sprinkle with cilantro.
- Serving size: (scant 1/4 cup)
