Ingredients

fresh lime juice

cooked skinless boneless chicken breast(s)

pineapple

uncooked jicama

sweet red pepper(s)

Instructions

  1. Stir lime juice, oil, cumin, and salt together in large bowl until blended. Add chicken, pineapple, jicama, cilantro, bell pepper, and scallions and toss to coat.
  2. Serving size: about 1¼ cups
