Canned tuna is good for more than tuna salad sandwiches. Try this inexpensive, convenient pantry star in a burger coated with crispy panko breadcrumbs and cooked in your air fryer in only 10 minutes. Go wild with the veggie toppings and switch up the seasonings in the burger patty. We use onion powder and Italian seasoning but you can try garlic powder and chili powder, smoked paprika and cumin, or curry powder and coriander. If you have any fresh herbs like mint, scallions, parsley, or cilantro you're looking to use up, feel free to mix those in too.

Ingredients

Light whole wheat hamburger buns

2 bun(s)

Canned tuna packed in water

5 oz

Egg

2 item(s), large

Italian seasoning

½ tsp

Table salt

½ tsp

Black pepper

¼ tsp

Onion powder

¼ tsp

Panko breadcrumbs

¾ cup(s), divided

Dijon mustard

4 Tbsp

Red onion

4 thin slice(s)

Lettuce

1 cup(s), chopped

Instructions

  1. In a medium bowl, mix the tuna, eggs, Italian seasoning, salt, pepper, onion powder, and 1/2 cup of breadcrumbs until well combined. Form into two 1/2-inch-thick patties. Press remaining 1/4 cup breadcrumbs onto patties to adhere. Place patties in freezer until firm, about 20 to 30 minutes.
  2. Meanwhile, preheat the air fryer to 400F.
  3. Coat the air fryer basket with cooking spray. Coat the tuna patties with cooking spray. Place patties in the air fryer and cook 10 minutes, until golden brown. Serve on the buns topped with the mustard, red onion, and lettuce.
