Ingredients

Canned pumpkin puree

15 oz, puree

Powdered sugar (confectioner's)

1 Tbsp

Pumpkin pie spice

½ tsp

Light aerosol whipped cream

1½ cup(s)

Gingersnap cookie

8 cookie(s), cookies, coarsely crushed (about 1/2 cup)

Crystallized ginger

2 Tbsp, finely chopped

Instructions

  1. In a small bowl, stir together pumpkin puree, powdered sugar, and pumpkin pie spice.
  2. In each of four (6 oz) glass jars or cups, place 3 1/2 Tbsp pumpkin puree mixture; level with a small spoon or rubber mini-spatula. Spoon 3 Tbsp whipped topping over top. Repeat layers once more and then sprinkle each parfait with 2 crushed cookies. Top each with 1/2 Tbsp ginger; serve immediately.
