For this low-carb snack, we riff on the flavors of an everything bagel sandwich with cream cheese and smoked salmon. A hard-boiled egg stands in for bread, providing lots of satisfying protein to make this snack more filling.

Ingredients

Hard boiled egg

2 large egg(s)

Smoked salmon, lox

1½ oz

Cucumber

8 slice(s), very thin

Red onion

½ medium, cut into very thin slices

Reduced fat whipped cream cheese

1 Tbsp

Everything bagel seasoning blend

½ tsp

Instructions

  1. Cut each egg in half lengthwise. On the bottom half of each egg, arrange half of the salmon, cucumber, and onion. Spread 1 ½ teaspoons cream cheese on the cut side of the top half of each egg; sprinkle evenly with the everything seasoning. Arrange the egg tops, cheese side down, on the sandwiches.
  2. Serving size: 1 sandwich
