Cottage cheese–sun-dried tomato dip

Just about any favorite veggie will work here as a dipper. Use broccoli florets, thick strips of red bell pepper, cucumber, carrots and celery.

Ingredients

Fat free cottage cheese

16 oz

Fat free mayonnaise

¼ cup(s)

Sun-dried tomatoes (without oil)

¼ cup(s), chopped

Uncooked scallion(s)

2 medium, chopped

Grated Parmesan cheese

1 Tbsp

Lemon juice canned or bottled

2 tsp

Cayenne pepper

tsp

Basil

2 Tbsp, or parsley, fresh, chopped

Instructions

  1. Combine all the ingredients except the basil in a food processor and process until smooth. Transfer the cheese mixture to a serving bowl and stir in the basil. Yields generous 1⁄2 cup per serving.
