Fat-free cottage cheese tops toasted sourdough bread, lending a protein boost as well as luscious creamy texture and tang that goes beautifully with the eggs.

Ingredients

Olive oil cooking spray

Sourdough bread

1 oz

Garlic powder

2 large egg(s)

Fat free cottage cheese

Instructions

  1. Heat a small nonstick skillet over medium heat. Coat both sides of the bread with cooking spray and sprinkle evenly on both sides with the garlic powder. Add the bread to the pan; cook until toasted, about 1 minute per side. Remove the bread from the pan.
  2. Crack the eggs into the pan. Cook until desired degree of doneness, 3 to 5 minutes. Spread the cottage cheese evenly over the toast and top with the eggs; sprinkle with the salt and black pepper.
  3. Serving size: 1 topped toast
