Coconut, Date, and Oat Snack Bites

These bite-size sweet snacks will last up to 2 weeks in the fridge or up to 3 months in the freezer.


Ingredients
Dried dates
7 oz, pitted and chopped
Uncooked old fashioned rolled oats
½ cup(s)
Maple syrup
2 tsp
Dried shredded and sweetened coconut meat
6 Tbsp, divided
Sea salt
½ tsp
Instructions

Place dates in a food processor; pulse a few times until broken down into a thick paste. Add oats, maple syrup, 1/4 cup coconut, and salt; process until a soft dough forms.

Roll date mixture into 20 (1-in) balls. Place remaining 2 tbsp coconut on a plate. Roll balls in coconut to coat and place in a single layer in a container with a lid. Refrigerate for 2 hours to firm up before serving.
