If you are a fan of the flavor combo of chocolate and mint, you’re going to love these fudgy treats! These decadent bars get their delightful mint flavor from the chocolate-covered mint candies that melt into the batter as it cooks. Replacing regular butter with apple butter and using melted chocolate in the batter keeps them moist making them even more irresistible. For the best results, be sure to let them cool before cutting them into squares. If you’d like to transport them to a potluck or picnic, stack them in a covered container layered between sheets of parchment paper.

Ingredients

Cake flour

1 cup(s), sifted

Unsweetened cocoa powder

1 cup(s)

Table salt

¼ tsp

Liquid egg substitute

1 cup(s)

Packed brown sugar

1 cup(s), dark-variety

Dark corn syrup

¾ cup(s)

Apple butter

¾ cup(s)

Vegetable oil

2 Tbsp

Unsweetened baking chocolate square

1 oz, melted

Chocolate covered mint

2½ oz, or mint candies (ie junior mints), chopped

Instructions

  1. Preheat oven to 350°F. Coat a 9- x 13-inch baking pan with cooking spray.
  2. In a large bowl, whisk together flour, cocoa and salt. In another large bowl, whisk together egg substitute, sugar, corn syrup, apple butter, oil and melted chocolate. Stir dry ingredients into wet ingredients until just blended.
  3. Pour batter into prepared baking pan and sprinkle with candies. Bake until firm, about 30 to 35 minutes. Allow to cool completely before cutting into 24 squares. Yields 1 square per serving.
