Chocolate-Peanut Bliss Balls

These no-cook peanut butter-and-fruit balls are a great midday snack or dessert. They also make a fabulous on-the-go breakfast - just pair a few with a banana. To toast the oats and coconut, toss them (separately) in a small nonstick skillet over medium heat until just golden. Keep them in an airtight container in the fridge for up to 5 days. To make these nut-free, swap in your favorite soy butter.


Ingredients
Uncooked rolled oats
¾ cup(s), lightly toasted
Dried dates
20 medium, pitted
Creamy peanut butter (salted, with oil and sugar)
2 Tbsp, or unsalted
Unsweetened cocoa powder
2 Tbsp
Unsweetened shredded coconut
½ cup(s), lightly toasted
Instructions

Process oats in a food processor until finely chopped. Add dates, peanut butter, cocoa and 2 tbsp water; process until well combined.

Using damp hands, roll 1 tbsp of date mixture into a ball. Roll ball in coconut to coat; place on a plate. Repeat to make 17 more balls. Cover and place in the fridge for 1 hour to firm. Serve.
