Cheesy Onion Rings with Smoky Ketchup

For a fun, gluten-free twist on standard onion rings, we bake thick slices of sweet onion in a silicone doughnut pan with cheese instead of breading. When these first come out of the oven, the cheese is a bit soft and gooey, but as they cool off, the cheese crisps. If you have an onion slice that’s too big to fit in the doughnut molds, simply cut through it and slightly overlap the cut edges.

Cooking spray

Reduced fat cheddar cheese
0.666 cup(s), shredded
Grated Parmesan cheese
0.333 cup(s)
Garlic powder
0.5 tsp
Sweet onion
1 medium
Unsweetened ketchup
6 Tbsp
Smoked paprika
0.75 tsp
Instructions

Preheat the oven to 375°F. Coat a 6-slot silicone doughnut pan with cooking spray (¼-cup capacity per slot).

In a medium bowl, toss together the cheeses and garlic powder. Sprinkle a generous 1 tbsp cheese mixture into each slot in the pan. Separate the onion slices into rings; arrange 1 ring in each slot, on top of the cheese. Bake until the cheese is melted and the onion feels slightly softened, about 12 minutes. Remove the pan from the oven and allow the onion rings to cool for 2 minutes. Slide a small spatula around the edge of each onion ring; invert the onion rings onto a plate. Repeat the process with the remaining cheese mixture and onion rings (or use a 12-slot silicone doughnut pan).

Meanwhile, in a small bowl, stir together the ketchup and paprika. Serve with the onion rings.
