Cat Cora’s coconut-graham berry yogurt parfait
unsweetened shredded coconut
plain fat free Greek yogurt
graham cracker crumbs
- In a small nonstick skillet, toast coconut over medium-low heat, stirring constantly to avoid burning and sticking, until dry and slightly browned, about 4 minutes. Remove from heat; set aside.
- To assemble parfaits, spoon 1/4 c yogurt into each of 4 short drinking glass; sprinkle each with 1 Tbsp graham cracker crumbs and top with some berries. Repeat with remaining ingredients to make 2 layers; finish each with 1 Tbsp coconut.
- Serving size: 1 parfait
