If you can’t find packaged graham cracker crumbs, smash whole crackers in a plastic bag with your hands or rolling pin.

Ingredients

Unsweetened shredded coconut

¼ cup(s)

Plain fat free Greek yogurt

2 cup(s)

Graham cracker crumbs

½ cup(s)

Mixed berries

3 cup(s)

Instructions

  1. In a small nonstick skillet, toast coconut over medium-low heat, stirring constantly to avoid burning and sticking, until dry and slightly browned, about 4 minutes. Remove from heat; set aside.
  2. To assemble parfaits, spoon 1/4 c yogurt into each of 4 short drinking glass; sprinkle each with 1 Tbsp graham cracker crumbs and top with some berries. Repeat with remaining ingredients to make 2 layers; finish each with 1 Tbsp coconut.
  3. Serving size: 1 parfait
