Here's a tip: Once a week, take inventory of your vegetable drawer amd make a potluck salad out of the veggies you have.

Ingredients

Lettuce

4 cup(s), chopped, mixed, leaves

Snow peas

1 cup(s), whole, trimmed

Cherry tomatoes

12 medium

Yellow tomato

1 cup(s), chopped, pear-shaped

Celery

¾ cup(s), chopped, sliced

Shallot

¼ cup(s), chopped, chopped

Cajun seasoning

tsp, or to taste

Uncooked skinless boneless chicken breast

10 oz

Diet Italian salad dressing (2 calories per tbs)

2 Tbsp

Instructions

  1. Place lettuce in a serving dish and top with vegetables; set aside.
  2. Sprinkle Cajun seasoning over chicken and broil, grill or barbecue it until cooked. Slice chicken into thin strips.
  3. Arrange warm chicken over salad and drizzle with dressing.

Notes

For a complete meal, top it with grilled tuna or chicken.
