Ingredients

Cooked broccoli

1 cup(s), small florets (steamed or roasted)

Apple

1 small, quartered, cut into matchsticks

Fat free cottage cheese

¼ cup(s)

Dried apricot halves

1 half/halves, finely chopped

Mustard

2 tsp, spicy variety suggested

Olive oil

1 tsp

Fresh lemon juice

1 tsp

Table salt

1 pinch(es), or to taste

Black pepper

1 pinch(es), or to taste

Sliced almonds

1 Tbsp

Instructions

  1. In a medium bowl, combine the broccoli, apple, cottage cheese, apricot, mustard, oil, and lemon juice. Season to taste with salt and pepper, and then garnish with the almonds.
